PIZZA!

So... been working on never needing to pay for take-away pizza again and this is my progress so far!
 
Let´s take it step by step!
 
1. Heat shit up! 
Put your oven on! I have a pizze stone from Claes Ohlsson that is always in my oven :)
I turn my oven on to the highest possible setting! For my oven that´s 275 C
 
2. The dough!
I make the dough following this recipe:
325 ml of yeast-friendly water and 7 gr of yeast.
Mix it with 500gr of Tipo 00 flour, I use Ramlösa Kvarn and/or Caputo and 1 pinch of salt!
make sure to really work it! :)
I divide the dough into 4 pieces and the dough I´m not using directly I save in a a plastic bag (smeared with olive oil) in the fridge. It will be even better in 1-2 days!
I let the dough rest for at least 2-3 hours under a damp cloth.
 
3. Tomato sauce!
While waiting for the dough to get ready I make the tomato sauce.
The base: San Marzano tomatoes (canned) or sweet cherry tomatoes.
Boil the tomatoes with some olive oil, garlic, dried herbs and a generous splash of red sweet wine.
I mix it so it´s lean!
This sauce is also great to use for pasta and/or a ragu base :)
 
4. Prepare the toppings
My fave toppings is: Mozzarella, Salami Ventricino, N´duja and basil!
 
 
5. Bake it out!
Use one of the dough lumps, put it on a baking paper covered with some flour.
Start in the middle and work out the dough using the carpus and the palm of your hands to get a thicker edge and a thin middle! If the dough breaks you can use parts of the edge to mend it.
 
6. Top it!
I start with the tomato sauce, covering the dough almost all the way out on the edges.Don´t use to much but also don´t hold back :) The edge will rise and expand while baking. The coverage does not have to be perfect it´s actually nice to have different layers of sauce.
Then I add ripped pieces of mozzarella, chunks of N´duja and Salame.
Save some mozzarella and the basil!
 
7. Into the heat!
Then I put my pizza in the oven and look at the dough to figure out when I´m happy with the bake. I like some pieces of my pizza to be burned. :)
While waiting: Have some Italian wine or beer
 
 
8. Final touches!
Take the pizza out, drizzle some good quality olive oil on top, add some mozzarella and some fresh leaves of basil.
 
9. Eat and cry happy tears because you made a delicious pizza, you had the bottle of wine even tough you did NOT plan to have that much and you feel Italian :)
